The Hassel back potatoes are a type of roasted potato dish that is named after the restaurant in Hasselbacken at Stockholm in Sweden. It was introduced at the restaurant in the 1940s and was referred to as hasselbackspotatis.

Hassel back potatoes are simple and only involve cutting the potato half-through to look like an accordion or fan after roasting.

When finely chopped half-through and roasted well, the inside is buttery and soft while the outer part should be slightly crisp.

  1. Scrub the sweet potatoes clean with a vegetable scrub brush or just tap to remove the dirty, special clay. Remove any sprouts with a paring knife and pat the potato dry with a paper towel.

Instructions

  1. The first step is to wash your sweet potatoes and dry them well.

  2. Use two chopsticks to help slice the sweet potatoes in to a hasselback.

  3. Place the chopsticks ate the bottom of the cutting surface.

  4. Securly place the sweet potatoes, one at a time over the chopsticks.

  5. Use a sharp knife and cut 1/4 inch slices. The chopsticks will guide you not to cut all the way through as they wil force you to stop.

  6. You should have an accordion shaped sweet potato like this.

  7. Mix the savory mix in a bowl. Add more or less of your favorite ingreidents.

  11. Wrap each of the sweet potatoes individually in foil and place them in the basket of your air fryer.

  12. Air fry at 400 degreesF for 40-45 minutes, flipping the sweet potatoes halfway.

  13. Alternatively, you can bake them in a preheated 425 degrees F oven, wrapped in foil the same way. Place them in a single layer on a baking sheet and rost, flipping them halfway for 50-60 minutes until tender.

  14. Once cooked and tender, remove the sweet potatoes, unwrap the foil.

  15. Drench extra savory butter over the savory seasoned ones.
