Vintage Lime delight cake recipe from the 1940s

Lime delight cake

Yield: Serves 16

Cook Time: 45 minutes

Total Time: 1 hour 15 minutes

Ingredients

  • 2-1/4 cups sifted Pillsbury's best enriched flour
  • 3-1/4 teaspoons double-acting baking powder
  • 1 teaspoon salt
  • 1-1/2 cups sugar
  • 1/2 cup shortening
  • 2/3 cup milk
  • 1/3 cup milk
  • 1/2 cup egg whites
  • 1 teaspoon vanilla
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 1 cup sugar
  • 1 slightly beaten egg yolk
  • 3 tablespoons lime juice
  • 1 tablespoon grated lime rind
  • 2 drops green food coloring
  • 1 egg white
  • 2/3 cup sugar
  • 1/4 cup light corn syrup
  • 3 tablespoons water
  • 1/4 tablespoon cream of tartar
  • 1 teaspoon vanilla extract
  • Lime mints

Instructions

  1. Sift together flour, baking powder, salt and sugar.
  2. Add shortening and 2/3 cup milk.
  3. Beat for 2 minutes until batter is well blended. (With an electric mixer, beat at low to medium speed for the same amount of time.)
  4. Add 1/3 cup of milk, egg whites, vanilla; beat for 2 more minutes.
  5. Pour batter into a lightly greased, floured, 8-inch layer cake pans.
  6. Bake in a moderate oven (350 F) for 30 to 35 minutes. Cool.
  7. Now for the lime filling. Blend together the cornstarch, salt, and sugar.
  8. Add the water and mix well.
  9. Cook over direct heat until thick, stirring constantly.
  10. Add a little of the hot mixture to the egg yolk; mix well and return to the remainder of the mixture.
  11. Cook over low heat for about 2 minutes; stir constantly.
  12. Add the lime juice, grated lime, and food coloring.
  13. Cool, then spread between layers.
  14. Now for the fluffy white frosting. Combine all ingredients except vanilla extract and lime mints.
  15. Place in top of a double boiler over rapidly boiling water and beat with a rotary beater until the mixture stands in peaks.
  16. Remove from the boiling water.
  17. Add vanilla; continue beating until thick enough to spread.
  18. Frost sides and top of cake, then decorate with lime mints.

Notes

All ingredients must be room temperature. Makes two 8-inch layers.
