This easy waffle recipe is vegan & can be made gluten-free

This waffle mix is really easy to make and is already dairy free & egg free. Unsweetened applesauce takes the place of oil and gives it a light sweetness.

These vegan double chocolate chip waffles can also be made gluten free – just use a gluten-free certified flour like oat flour. You can also grind your own old fashioned oats in to oat flour really easily – just put in a high powered blender and blend until a powder forms.

I use whole wheat pastry flour to have a lighter, fluffier texture, but regular whole wheat flour works great too; it’s just more course.

What kind of non-stick waffle maker should I buy?

How many waffles this makes, really depends on the size of your waffle maker. I have a pretty big Belgian Waffle Maker, so it makes 4 large waffles. To make waffles without having to use oil, you’ll want a good non-stick waffle maker. There are now ceramic-coated waffle makers that are non-toxic & non-stick like these.

Use this vegan waffle recipe to make pancakes

Don’t have a waffle maker and want to make pancakes? No problem! Use this exact recipe to make plant based pancakes for breakfast instead.

Pour a 1/4 cup of the batter on to a pan or griddle on medium heat. Don’t let sides of batter touch, so use a large pan to make multiple pancakes at a time. When the edges look dry, flip and cook for about 2 minutes more.

What brand of vegan dark chocolate chips to use

To make these waffles whole food plant based, use vegan DARK chocolate chips. I like the brand The Enjoy Life Dark Chocolate Chips contains only a small amount of sugar & is 69% cacao.

If you find that the batter isn’t sweet enough when leaving out the vegan chocolate chips, you can add 1/4 cup of date syrup or pure maple syrup for added sweetness.

What’s the best WFPB syrup?

The BEST WFPB syrup to use is date syrup! It’s just dates and water blended up, so you get all the nutrition and fiber, and it is lower on the glycemic index than regular syrup.

  • sliced strawberries

Instructions

  • Preheat a waffle griddle.

  • Milk together all dry ingredients in a large mixing bowl.

  • Add the milk, apple sauce, & vanilla and mix until well combined. Add more milk for thinner consistency. Mix in vegan chocolate chips if using.

  • If you have a non-stick waffle iron you won't have to use any oil, like a ceramic-coated one. But if you don't, lightly spray both sides of the waffle griddle with cooking spray. Using the waffle maker scoop (usually about a 1/4 cup) pour batter into the griddle. Close & cook according to the directions.

  • Makes about 4 large waffles, depending on the size of your waffle maker.

  • Top with fresh berries and serve immediately!

Notes

You can store the waffles in an air tight container for up to 7 days. Reheat waffle in the microwave for 30 seconds to warm.
